Those who know me, know that I LOVE soup. I prefer vegetable soup or minestrone but depending on my mood I can go for any types of soup. I recently found a super simple recipe and have tweaked it to my liking and have made all three versions and love all the heartiness each option has!

This can be done in a crock pot, on a stove top, or Instant Pot. I prefer the instant pot and the cooking instructions are catered to that! I own the 6-in-1 duo instant pot (6 Quart). If you have the 8 quart you can add 1-2 more bags of frozen vegetables.

Depending on your preference you can make it a beef vegetable soup, chicken vegetable soup, or vegetarian vegetable soup. The great thing is to make this happen you swap out only TWO ingredients!

You will notice I prefer the organic canned option. I do that because I have a sensitive digestive system and I have learned that canned organic options do not upset me like non-organic canned products do. In addition, you can also swap out canned and frozen products for ALL FRESH PRODUCTS. If you do this, I suggest the cooking time go down to 10 minutes.

Ingredients:

  • 1 container of Beef/Chicken/Vegetable Broth (choose your preference)
  • 1 28 ounces can of diced tomatoes (I prefer organic and fire roasted)
  • 1 15 ounce of tomato sauce (I prefer organic)
  • 1 Packet of bouillon (beef/chicken/vegetable) (choose your preference)
  • 3 bags of frozen vegetables (any that you prefer)
  • Frozen Seasoning Blend
  • Garlic
  • Sweet Basil
  • Black Pepper

Instant Pot Cooking Instructions:

  1. Pour the 28 ounce can of tomatoes into the instant pot (KEEP THIS CAN)
  2. Pour HALF of the 15-ounce tomato sauce can into the instant pot
  3. Open and dump all frozen products into the instant pot
  4. Add the garlic, sweet basil, and black pepper (I prefer a spoonful of each)
  5. Pour the whole container of broth
  6. Take the 28 ounce can and fill it up a third of the way. Mix the bouillon in the water and pour it on top. There should be enough liquid to pretty much cover all ingredients and not exceed the max line.
  7. Put the lid on, select MANUAL and cook for 20 minutes
